Gingy, the best known living cookie
Cookies are a species of living food in the Shrek universe. They are typically seen in the form of Gingerbread people, given life by an unknown process. As seen in later installments of the series, sentient sweets are shown to take up a pretty decent amount of the population. During Gingy's flashbacks in Shrek the Third, it appears that various civilizations were formed by the gingerbread people.
Certain cookies can take the form of animal shapes, along with gaining the behavior of non-intelligent creatures. They are also a different flavor of cookie, that being sugar. However they were only shown in Shrek Forever After.
The process in how cookies gain life was revealed in both Shrek 2 and Scared Shrekless. Unlike what would be expected, gingerbread men and other sweets are not brought to life by magic. As seen with Mongo, his creation parallels that of Frankenstein's monster-- using primitive medieval technology and usage of meteorology. The same can be said for Sugar later on, which further proves how the cookies are not actually magical.
