Joseph "Joe" Stillman (born August 1, 1959) is an American screenwriter, producer, and director.

He had worked on several TV shows during his early career. Most notably, he wrote for Beavis and Butt-Head and King of the Hill. The latter of which he also consulted and co-produced.

Prior to Shrek, his only feature length screenplay was Beavis and Butt-Head Do America, which he co-wrote with series creator Mike Judge. He would later join the writing duo Ted Elliot & Terry Rossio and Roger S.H. Schulman to write Shrek, which was released in 2001. He would be the only screenwriter of the first film to co-write the sequel, Shrek 2.

After Shrek 2's release in 2004, Stillman wrote for several live-action and animated productions. These include the feature films Planet 51 and Gulliver's Travels, and the Nickelodeon cartoon Sanjay and Craig.
